Not too long ago, my nieces were obsessed with Minions, and I knew who Bob, Kevin, and Stuart were. I don't remember which is which now, but I know all I have to do is ask if I want to know. Does this sound like your nieces, nephews, kids, or grandkids?
Of course, the Minion obsession has passed, and they’ve moved on to Moana, but I couldn’t resist making these adorable Minion Cupcakes. Aren’t they just the cutest?

Minion Mini Cupcakes
Step 1 | The Minion Face+
You’ve made your delicious mini cupcakes and buttercream; now, you want to generously frost the top of your mini cupcake. I piped mine using a disposable pastry bag and a no.12 round decorating tip, but a knife, offset spatula, or the corner of a plastic baggie snipped off will also suffice.
During this step you'll also be starting the Minion goggles; those are goggles, right? You want to make one or two black/grey blobs of frosting depending on if your Minion is going to have one or two eyes; I fancy the one-eyed Minion. I used a disposable pastry bag and a no.3 round decorating tip; you can also snip the corner of a plastic baggie off and use that.
Step 2 | The Minion Eye(s)
After you have your black/grey goggle blob(s), you'll need to add the eye(s). For the eyes, I used Royal Icing Eyes which I made up ahead of time. You can also purchase them, or use white and black buttercream frosting. If you’re using royal icing eyes like I did, gently press into your black/grey blob(s).
Step 4 | Minion Goggle Straps + Mouth
Once you have your eye(s) added, you need to add the black/grey straps to your goggles and your Minion's mouth. I used the same disposable pastry bag and no.3 round decorating tip as I did for the black/grey blob (step 1 – face). For the mouth, I piped "O" mouths and "smiles", but feel free to get Minion creative!
