If you follow me on Twitter than you know I talk about running a lot. I've been hardcore #5KTraining for the Lombardi Walk/Run for Cancer. The Vince Lombardi Cancer Foundation is near and dear to my heart. I run for family members who are no longer with us and for future friends and family. I've also been fundraising which, helps provide care for cancer patients and their families, builds cancer awareness, and supports cancer research. Or, as the Lombardi Walk/Run for Cancer says, “Let’s Tackle Cancer”!
I decided to 'pick up' running two years ago after I mostly walked the Lombardi Walk/Run for Cancer. Unfortunately, running does not come naturally to me and it has been a slow road, especially in winter. I've been really pushing myself this year and in the process I've fallen in LOVE with running. I can’t believe I just wrote that {but its true}. I am currently signed up for four 5K runs this year and want to sign up for at least six more. Yeah, "go big or go home". 🙂
It’s in running that I have also found more reasons to love bananas. They are a runner’s super food.
Bananas are an excellent source of potassium, which helps prevent muscle cramps. Potassium also regulates blood pressure and reduces the risk of stroke. Bananas also have more carbohydrates than any other fruit. Carbs are fuel for runners, making bananas a great energy source.
If you're not a runner though, that doesn't mean you can't or shouldn't enjoy a delicious banana. Everyone will benefit from the wide range of nutritional benefits of bananas. Wow, I sound like a banana infomercial.
Running. Bananas. Baking. Banana Chocolate Chip Cupcakes with Chocolate Buttercream.
These Banana Chocolate Chip Cupcakes with Chocolate Buttercream are a dream.They are deliciously moist, banana-y with little hints of chocolate, and a dollop of creamy chocolaty goodness on top, otherwise known as Chocolate Buttercream. These cupcakes may not be quite as healthy as eating a banana, but I promise these cupcakes with satisfy your love for bananas and chocolate.
The Banana Chocolate Chip Cupcakes recipe is based off of my Very Banana Cupcakes. It's a simple doctored boxed cake mix recipe that is absolutely to-die for good. The recipe utilized a white boxed cake mix, water, oil, eggs, baking soda, baking powder and a boat load of bananas. OK, four bananas. That's a boat load, right?
The Very Banana Cupcakes recipe is one of my favorite cupcake recipes {my sister too}, and it only gets better with the addition of chocolate chips. Doesn't everything? You'll love these Banana Chocolate Chip Cupcakes too!
The Chocolate Buttercream is my go-to Chocolate American Buttercream. It's a favorite for sure. It’s creamy, fluffy, and deliciously chocolaty. If you're not a fan of Chocolate Buttercream, these Banana Chocolate Chip Cupcakes would also be fabulous with Vanilla Buttercream or Cinnamon Buttercream. Can we all collectively say, "Yum"!
I am not saying that Banana Chocolate Chip Cupcakes with Chocolate Buttercream would be the perfect after run snack. A regular banana would probably be better. It would however, be a fab dessert or delicious 'just because' treat.
I mean seriously...bananas and chocolate. Is there really anything better?
Banana Chocolate Chip Cupcakes with Chocolate Buttercream
Ingredients
Banana Chocolate Chip Cupcakes
- 1 white boxed cake mix
- ¾ cup water
- ¼ cup vegetable oil
- 3 large eggs, at room temperature
- ¾ teaspoon baking soda
- 1 teaspoon baking powder
- 4 small-medium ripe bananas
- 1 cup mini chocolate chips
Chocolate Buttercream
- 1 cup unsalted butter, softened
- 1 cup vegetable shortening
- ½ cup unsweetened cocoa powder
- 1 and ½ tablespoons vanilla extract
- ½ teaspoon salt
- 2 lbs powdered sugar
- 7 tablespoons milk
Instructions
For Banana Chocolate Chip Cupcakes
- Preheat the oven to 350F degrees. Line cupcake pan with cupcake liners. Set aside.
- In a large bowl using an electric mixer, mix together boxed cake mix, water, oil, eggs, baking soda and baking powder on medium speed for 2 minutes. Mixture should be combined and smooth. Add bananas; mix until combined. Gently mix in chocolate chips.
- Scoop batter into cupcake liners, no more than ⅔ full. Bake for about 12-15 minutes. Check cupcakes around 13 minutes to avoid over-baking. Insert a toothpick into the center of the cupcake, if it comes out clean it is done. Remove cupcakes from oven and allow cupcakes to cool in cupcake pan for 4 minutes; transfer to wire rack and cool completely. Cupcakes should be cooled completely before frosting.
For Chocolate Buttercream
- In a large bowl using an electric mixer, cream butter and shortening until creamy and smooth. Add cocoa powder, vanilla extract, and salt; mix until combined.
- Slowly add powdered sugar 1 cup at a time; beating well after each addition. Scrape down bowl as necessary.
- Once all powdered sugar has been mixed in, add 1 tablespoon of milk at a time and mix. Continue to add and mix until desired consistency is achieved.
- Frost using a decorating tip or spatula onto cooled cupcakes. Eat & Enjoy!

This specific recipe is for a doctored cake mix banana cupcakes. You can certainly make banana cupcakes from scratch, unfortunately I do not have a recipe for that to share with you right now. A quick Google search may provide you with some results.
I will add from scratch banana cupcakes to my future recipes, unfortunately that doesn't help you right now. 😉 Sorry, I couldn't be of more help.
