I have at least one million recipes {she says in her Dr. Evil voice with her pinky to her mouth} that I want to bake, but I must have a thing for crinkle cookies because not too long ago I made Mint Crinkle Cookies. It must have something to do with cookies doused in powdered sugar that I have a sweet spot for.
Today, I am sharing Pink Lemonade Crinkle Cookies. This pink gem of a cookie is soft, chewy, and engulfed in powdered sugar; it's pure perfection. Youโll love these cookies not only because theyโve been compared to Fruit Loops, Trix, and pink Starburst, but because they are oh-so-easy.
These Pink Lemonade Crinkle Cookies use six ingredients: Pillsbury Pink Lemonade Cookie Mix, butter, eggs, vanilla extract, a wee-bit of sugar, and powdered sugar, which is kind of the best part, other than the fruity pink lemonade part that will also rock your socks.
Yes, these Pink Lemonade Crinkle Cookies use a cookie mix. This is largely where the easy comes in, but donโt let this dissuade you; they are GOOD! If you can't find Pink Lemonade Cookie Mix, you can also use Pink Lemonade Cake Mix.
The super-not-so-secret secret to a magnificent crinkle cookie is in the powdered sugar and crinkles. You donโt want your crinkle cookie to absorb the powdered sugar. To avoid this crinkle cookie misadventure, you'll need to roll your balls of cookie dough in granulated sugar before you roll them in the powdered sugar; the granulated sugar will act as a little barrier. This little baking tip is a crinkle cookie godsend, so stuff that in your back pocket for later. ๐
Now letโs talk pink lemonade. I like pink lemonade. I especially like pink lemonade as a cookie, but since when does pink signify a flavor?! Pink lemonade isnโt just lemonade that is pink; itโs sweeter and slightly less sour. So, pink is a flavor. Yeah, I know, I get it. Itโs like driving on a parkway and parking in a driveway; it just doesnโt seem right to me. Neither do all the commas and semicolons in this paragraph, but this is how my crazy mind rolls.

Pink Lemonade Crinkle Cookies
Ingredients
- 1 pink lemonade cookie mix or pink lemonade cake mix
- 6 tablespoons butter, melted
- 2 large eggs
- ยพ teaspoon vanilla extract
- ยผ cup granulated sugar
- โ cup powdered sugar
Instructions
- Preheat oven to 375F degrees.
- In a large bowl using an electric mixer, mix together pink lemonade cookie mix or pink lemonade cake mix, melted butter, eggs, and vanilla extract; mix until combined.
- Place granulated sugar and powdered sugar in separate shallow dishes. Scoop dough into tablespoon balls using a #50 disher and drop into granulated sugar and roll to coat. Transfer dough balls to powdered sugar and roll to coat. Evenly space dough balls on a silicone mat/parchment paper-lined baking sheet.
- Bake 8-10 minutes, until puffed and cracked and edges have begun to set but centers are still soft (cookies will look raw between cracks and seem underdone).
- Cool cookies on a baking sheet on a wire rack for 5 minutes; transfer to a wire rack to cool completely. Eat & Enjoy!

I just made these and they are super yummy! However, they went super flat... Should the oven temp be higher? What kind of butter do you use?

Hi Aubrey! I am so glad you enjoyed these cookies. It "could" be over mixing, your oven temperature isn't accurate, or the cookie sheets are too warm between batches. Honestly, all the reasons cookies go flat shouldn't happen with these cookies since they are made with a cookie mix. I've have cookies go flat A LOT but never with this recipe, so I am perplexed as to what could have happened. I always use unsalted butter, but I use different brands. Maybe if I am able to recreate the problem, I might have a better answer. I am sorry that doesn't really help you. :/

Hi Mila. You could also make it with Pink Lemonade Cake Mix. I haven't tested making Pink Lemonade Crinkle Cookies without using the mixes yet, so I don't really have an alternative for you. You could just make Lemon Crinkle Cookies and use a lemon cake mix. I know its not quite the same. Sorry, I don't have a better suggestion for you at this time. I would really need to bake and test alternatives first. Thanks!
