In a large bowl, whisk together flours, baking soda, and cinnamon. Set aside.
In a large bowl using an electric mixer, cream together butter and sugars on medium speed. Add eggs and vanilla extract; beat well.
Add flour mixture to wet ingredients; mix until combined. Add oats and cinnamon baking chips; mix well.
Scoop into tablespoon balls, or use a #40 disher to scoop balls of dough. Place on an ungreased baking sheet or silicone mat/parchment paper-lined baking sheet.
Bake 8-10 minutes, or until light golden brown.
Cool cookies on a baking sheet for a minute then transfer to a wire rack to cool completely. Eat & Enjoy!
