Pumpkin Snickerdoodle Truffles

Chocolate covered snickerdoodles cookie dough bursting with PUMPKIN!

Yield: 22 truffles
Pumpkin Snickerdoodle Cookie Dough
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/2 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 and 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 and 1/2 teaspoons ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon cream of tartar
For White Chocolate Coating
  • 2 cups white chocolate wafers
  • 2 tablespoons paramount crystals
  • Wilton Orange Candy Color
For Pumpkin Snickerdoodle Cookie Dough
  1. Dust silicone mold cavities with flour and dump out excess. Set aside.
  2. In a large bowl using an electric mixer, cream together butter and sugars on medium speed until light and creamy. Mix in pumpkin puree and vanilla extract; mix until combined.
  3. Stir in flour, salt, cinnamon, pumpkin pie spice, and cream of tarter on low speed until incorporated.
  4. Refrigerate dough for 30 minutes or until firm enough to handle.
  5. Press dough into mold cavities; remove excess dough so it is flush with the mold.
  6. Put dough filled mold in freezer for 60 minutes or until firm enough to handle.
For White Chocolate Coating
  1. In a microwave safe bowl, add white chocolate wafers and paramount crystals. Microwave on medium heat for 30 seconds. Remove and stir slowly. Replace in microwave for 15 second increments until white chocolate is completely melted.
  2. Add a few drops of Wilton Orange Candy Color to melted chocolate and mix. Add more color to achieve desired orange.
  3. Dip Pumpkin Snickerdoodle Truffles into white chocolate using a fork or dipping tool and lightly tap to remove excess chocolate; transfer to parchment paper until chocolate hardens. Eat & Enjoy!

Pumpkin Snickerdoodle Truffles should be stored in an airtight container in the refrigerator and will keep for 4+ days.

Optional: Paramount crystals help keep chocolate shiny and smooth, as well as alleviate sugar bloom and fat bloom. You do not need them, but they are recommended.
