Classic Oatmeal Cookies
Yield: 4 dozen cookies
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat pastry flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups old fashioned oats
  • 1 cup treat of your choice¹
  1. Preheat oven to 350 degrees.
  2. In a large bowl, whisk together flours, baking soda, and cinnamon. Set aside.
  3. In a large bowl using an electric mixer, cream together butter and sugars on medium speed. Add eggs and vanilla extract; beat well.
  4. Add flour mixture to wet ingredients; mix until combined. Add oats and favorite treat*; mix well.
  5. Scoop dough into tablespoon balls and place on ungreased cookie sheet.
  6. Bake 8-10 minutes, or until light golden brown.
  7. Cool cookies on cookie sheet for a minute, then transfer to a wire rack to cool completely. Eat & Enjoy!

¹ Optional: Add 1 cup of your favorite treat; i.e. raisins, walnuts, chocolate chips, etc.
