Its strawberry picking season and it seems everyone I know has or is going strawberry picking. I am a bit jelly because Iโd love to go strawberry picking. Iโve never been strawberry picking as an adult, and as a baker, it would be the icing on the cake, literally. Itโs also a fab way to get a ton of strawberries to make all of these 18 Sweet Strawberry Recipes, which I so totally want to do. How about you?
Iโve been on quite the strawberry kick the last month or so, hence all the strawberry recipes around here. Youโd think I already went strawberry picking, but only if the grocery store counts. Hopefully, youโre not too sick of seeing strawberries on SBS, because Iโve got another one for you today, but donโt worry Iโll be switching gears soon. Weโve got my birthday month coming up!

Todayโs recipe, Strawberry Buttercream, was originally shared with my Strawberry Banana Mini Cupcakes; however, this Strawberry Buttercream is SO knock your socks off that I felt it deserved its own post!
This Strawberry Buttercream combines fresh strawberries that you will puree and mix with butter, powdered sugar, and a touch of vanilla extract. Youโll whip it {whip it good} all together until you get a fluffy cloud of strawberry heaven that youโll want to eat with a spoon.
Honestly, I want to eat most buttercream with a spoon, which is totally normal, right?
But seriously, youโll love this Strawberry Buttercream because it is super simple with only four ingredients, itโs oh so good, and itโs healthy because it contains fruit {never mind the butter}.
Bing, Bang, Boom, youโve got Strawberry Buttercream! It all starts with a little strawberry picking, even if that strawberry picking is at your grocery store.

Strawberry Buttercream
Ingredients
- 1 cup unsalted butter, softened
- ยพ teaspoon vanilla extract
- 4 cups powdered sugar ยน
- 5 tablespoons strawberry puree ยฒ
Instructions
- Hull and halve strawberries. Place in a food processor and blend until strawberries are pureed; no chunks. Set aside.
- In a large bowl using an electric mixer, cream butter until creamy and smooth. Add vanilla extract; mix until combined.
- Turn mixer on lowest speed and slowly add 1 cup of powdered sugar; mix until creamy. Scrape down bowl as necessary. Add 1 tablespoon strawberry puree; mix until combined.
- Alternate between adding 1 cup powdered sugar and 1 tablespoon strawberry puree until remaining powdered sugar and strawberry puree has been added. Blend until creamy. Eat & Enjoy!

I want to use this frosting for strawberry filled vanilla cupcakes. Do you think it would be too much strawberry? I am worried it will be a bit overwhelming with strawberry inside and on top of the cupcake. What do you think?

Sandy - I don't think it will be too much strawberry. I think it may be too much buttercream. That being said, obviously everyone's tastebuds are different. If you are using the strawberry buttercream for both a filling and on the top, you can always test one and if you think it's too much, just put it on top. I am sorry if that answer doesn't help you! :/

Hi Renee. It really depends on how much frosting you use. I would estimate about 2 dozen cupcakes give or take. Thanks!

This recipe sounds amazing! Would it be possible to tint the frosting a light blue color without it turning lavender?

Hi Shay! Thank you! Honestly, I have no idea. I gave it some thought and with the frosting being pink I don't think there is a way to avoid the lavender. All I can say is to play around with it. Sorry I couldn't be more helpful!
