I love Rice Krispies Treats. They are simple to make, they utilize few ingredients, and they always disappear quickly. Best of all, they’re one of those sweet treats that feels like you are eating nothing, but in a good way. If you don’t feel like you’re eating it, there are no calories, right?
These Pumpkin Spice Rice Krispies Treats are just as easy to make as the traditional Rice Krispies Treats you know and love, but with a bit of Fall flair. To start you’ll need the basic Rice Krispies Treats ingredients of unsalted butter and Rice Krispies cereal. Now this is where the Fall flair comes in. You’ll need Kraft Pumpkin Spice Marshmallows, pumpkin pie spice, and ground cinnamon.
The Pumpkin Spice Marshmallows are imperative to the recipe; however, you can do without the pumpkin pie spice if you don’t have any. The added pumpkin pie spice makes the pumpkin spice flavor really POP.
You can also make your own pumpkin pie spice by adding 3 tablespoons ground cinnamon, 2 teaspoons ground ginger, 2 teaspoons ground nutmeg, 1 ½ teaspoons ground allspice and 1 ½ teaspoons ground cloves. Mix the spices together in a small bowl and store in a small jar. Tada! You’ve made pumpkin pie spice.
If you’re familiar with making Rice Krispies Treats then the making of the Pumpkin Spice Rice Krispies Treats will be a snap, crackle, and pop for you! The only difference is the marshmallows you're using and you need to add in the spices when you are melting your pumpkin spice marshmallows.
At this point you’ve got your Pumpkin Spice Rice Krispies Treats and you can be done. However, I like to decorate my treats so this is where you would whip out your trusty pumpkin cookie cutter and start making your treats into adorable pumpkin shapes.
To Cut Pumpkin Shapes
To cut your Pumpkin Spice Rice Krispies Treats into pumpkin shapes you’ll need a pumpkin cookie cutter, cooking spray, and waxed paper to put your cut out pumpkin treats on.
Quick Tip: The key to cutting your Pumpkin Spice Rice Krispies Treats into shapes using a cookie cutter is you need to do it while the Rice Krispies Treats are still warm!
Step 1
You’ve got your Pumpkin Spice Rice Krispies Treats all smooshed down into a 13x9" pan and they are warm because you are doing this immediately after smooshing them into said pan. Now you’ll want to spray your pumpkin cookie cutter and your fingers with cooking spray to help with the stickiness.
Quick Tip: Cooking spray is your friend. You may need to spray it onto your cookie-cutter more than once.
Step 2
While the treats are still warm, press your pumpkin cookie cutter into your Pumpkin Spice Rice Krispies Treats. Using your fingers press the cereal down inside the cookie cutter and then gently lift the cutter and cut treat out of the pan. Gently press the treat out of the cutter and onto your waxed paper.
Step 3
There are no Pumpkin Spice Rice Krispies Treats scraps. You’ll cut two pumpkins with your pumpkin cookie cutter and then squish+smoosh {love those technical terms} the scraps into the uncut Rice Krispies Treats, and then go back to cutting. You’ll keep doing this until there are not enough treats left to cut a pumpkin out of. I had hardly any left, but the amount will depend on the size of your cookie cutter and how good you are at squishing and smooshing your treats.
Quick Tip: You need to be somewhat quick about this, as you want to finish cutting out all your pumpkins before your Rice Krispies Treats cool. They need to be warm.
Once you’ve cut all your Pumpkin Spice Rice Krispies Treats into pumpkins you can be done. However, I like to go big or go home so we’re going to dip these bad boys into a little melted white chocolate.
For the white chocolate I used my trusty Ghirardelli White Chocolate Melting Wafers, Paramount Crystals, and Wilton Primary Candy Color Set {Orange}. The paramount crystals help prevent sugar and fat bloom, but are not crucial to the recipe. Chocolate is very finicky though; I always recommend the paramount crystals.
Quick Tip: If you want your chocolate to be orange you either need Orange Melting Wafers or Candy Color. You cannot use typical food/frosting coloring as these are water-based and will seize your chocolate.
So, melt your chocolate, dip your Pumpkin Spice Rice Krispies Treats and let the chocolate harden.

Pumpkin Spice Rice Krispies Treats
Ingredients
Pumpkin Spice Rice Krispies Treats
- 3 tablespoons unsalted butter
- 8 oz package Pumpkin Spice Marshmallows
- ¼ teaspoon pumpkin pie spice
- ¼ teaspoon ground cinnamon
- 5 cups KELLOGG'S Rice Krispies cereal
Orange White Chocolate Coating
- 1 and ½ cups white chocolate melting wafers
- 1 and ½ tablespoons paramount crystals¹
- Wilton Orange Candy Color
Instructions
For Pumpkin Spice Rice Krispies Treats
- Melt butter in large saucepan on low-medium heat until melted.
- Add Pumpkin Spice Marshmallows, pumpkin pie spice, and cinnamon and stir until completely melted. Remove from heat.
- Add KELLOGG'S Rice Krispies cereal. Stir until well coated.
- Using a spatula, press mixture into a 13x9x2" pan coated with cooking spray.
- Using a pumpkin cookie cutter coated with cooking spray, press into still warm treats. Press treats inside of cookie cutter down with your finger. Remove cutter and pumpkin treat to waxed paper and gently press out treat. Respray cookie cutter with cooking spray as needed.
- Press scraps together and flatten into pan again. Continue cutting pumpkin shapes until no more Pumpkin Rice Krispies Treats can be cut.
For Orange White Chocolate Coating
- In a microwave safe bowl, add chocolate wafers and paramount crystals. Microwave on medium heat for 30 seconds. Remove and stir slowly. Replace in microwave for 15 second increments until chocolate is completely melted.
- Add a few drops of Wilton Orange Candy Color to melted chocolate and mix. Add more color to achieve desired orange.
- Dip Pumpkin Spice Rice Krispies Treats into chocolate and lightly tap to remove excess chocolate; transfer to waxed paper. Repeat until all treats are coated in chocolate. Allow Pumpkin Spice Rice Krispies Treats to sit until chocolate hardens. Eat & Enjoy!
