Pumpkin Snickerdoodle Truffles – chocolate covered snickerdoodles cookie dough bursting with PUMPKIN!
This year my family decided to forgo the annual Halloween Party. I LOVE Halloween, but I must confess I am happy with this decision. I just wasn’t prepared for Fall this year. It seems like it blew in out of nowhere. Suffice to say, it’s been a busy year. Is it just me or is this year going by fast?
The lack of Halloween party this year hasn’t stopped us from celebrating Halloween though. We carved pumpkins with my family and went trick-or-treating with my nieces. I also made adorable and delicious football {Go Packers!} and candy corn decorated cutout cookies.
In addition to decorated cutout cookies, I’ve also been dabbling in pumpkin. You’ve already tried my Pumpkin Spice Rice Krispies Treats, right? Today it’s Pumpkin Snickerdoodle Truffles!
First, let’s talk Snickerdoodles. I am a big fan. There is just something about the simplicity of cinnamon and sugar. Yum! I’ve also made Pumpkin Snickerdoodle Cookies and Snickerdoodle Cupcakes because that’s just how I roll. Now today, we’re doing Pumpkin Snickerdoodle Truffles.
Pumpkin Snickerdoodle Truffles are pumpkin snickerdoodle cookie dough, minus the eggs of course. They contain both pumpkin puree and pumpkin pie spice, which makes them positively pumpkin. The addition of cinnamon gives them a little something extra, and the cream of tartar makes them true Snickerdoodles.
I fancied my Pumpkin Snickerdoodle Truffles up with the Wilton Pumpkin Silicone Mold. It’s really easy to use and I love the adorable pumpkin shapes. You can also scoop your Pumpkin Snickerdoodle Truffles into balls. They will still taste awesome and you can put your own decorative spin on them. I am a big fan of sprinkles!
The finishing touch to these Pumpkin Snickerdoodle Truffles is dipping them into chocolate. I used Ghirardelli White Chocolate Melting Wafers and Wilton Candy Color Orange. These delicious pumpkin truffles are best served cold and should be stored in an airtight container in the fridge.

Pumpkin Snickerdoodle Truffles
Ingredients
Pumpkin Snickerdoodle Cookie Dough
- ½ cup unsalted butter, room temperature
- ½ cup granulated sugar
- ¼ cup brown sugar, packed
- ½ cup pumpkin puree
- 1 teaspoon vanilla extract
- 1 and ¼ cups all-purpose flour
- ¼ teaspoon salt
- 1 and ½ teaspoons ground cinnamon
- 1 teaspoon pumpkin pie spice
- ¼ teaspoon cream of tartar
For White Chocolate Coating
- 2 cups white chocolate melting wafers
- 2 tablespoons paramount crystals¹
- Wilton Orange Candy Color
Instructions
For Pumpkin Snickerdoodle Cookie Dough
- Dust silicone mold cavities with flour and dump out excess. Set aside.
- In a large bowl using an electric mixer, cream together butter and sugars on medium speed until light and creamy. Mix in pumpkin puree and vanilla extract; mix until combined.
- Stir in flour, salt, cinnamon, pumpkin pie spice, and cream of tarter on low speed until incorporated.
- Refrigerate dough for 30 minutes or until firm enough to handle.
- Press dough into mold cavities; remove excess dough so it is flush with the mold.
- Put dough filled mold in freezer for 60 minutes or until firm enough to handle.
For White Chocolate Coating
- In a microwave safe bowl, add white chocolate wafers and paramount crystals. Microwave on medium heat for 30 seconds. Remove and stir slowly. Replace in microwave for 15 second increments until white chocolate is completely melted.
- Add a few drops of Wilton Orange Candy Color to melted chocolate and mix. Add more color to achieve desired orange.
- Dip Pumpkin Snickerdoodle Truffles into white chocolate using a fork or dipping tool and lightly tap to remove excess chocolate; transfer to parchment paper until chocolate hardens. Eat & Enjoy!
