I’ve gotten really into recycling paper. It has gotten to the point where I feel bad if I throw away any shred of paper that could be recycled. Sometimes I throw away an empty toilet paper tube and wonder if I should be recycling it. Then I am like, girl get a grip and I walk away…or I’ll repurpose it for gift wrapping.
My sister made these cute owls out of toilet paper tubes for her Christmas tree, although I don’t think it had anything to do with a compulsive need to recycle paper.

I made these delicious Peanut Butter Sandwich Cookies for the Mosley Ugly Christmas Sweater Party, along with Buttercream Thumbprint Sugar Cookies and Butter Mint Pillows. The Peanut Butter Sandwich Cookies were a HUGE hit. My dad really enjoyed them and he is not a man of many words when it comes to baking. I was also told they were better than store-bought {I hope so!}, which I took as a compliment.
These Peanut Butter Sandwich Cookies are made up of a creamy peanut butter frosting filling sandwiched between two soft and chewy peanut butter cookies. It sounds like a lot of peanut butter, and it is, but it is the perfect coupling of peanut butter with peanut butter.
The peanut butter frosting filling is made up of creamy peanut butter, powdered sugar, vanilla extract, and milk. It is a reasonably thick frosting filling, but it does not overpower the cookie in flavor. The recipe for the peanut butter frosting filling is enough to fill the cookies with a small to medium amount of filling if you want your cookies to have A LOT of filling than you should double the frosting filling recipe.
The peanut butter cookies are a to-die-for peanut butter cookie. If you aren’t partial to frosting/fillings in your cookies or just want a GOOD peanut butter cookie, the cookie aspect of this recipe is fabulous. Truth be told, I am not a huge peanut butter cookie fan, but I really enjoyed this cookie.
The peanut butter cookie component is soft and chewy with a lovely peanut butter flavor. Fabulous on its own, but even better with the peanut butter frosting filling! Together this cookie is out of the park peanut buttery.

The Peanut Butter Sandwich Cookies can be made bite-size or larger if you desire. I feel like two cookies plus filling is a lot of cookies so I prefer a more bite-size cookie. Mine actually was a little larger than I would have preferred, but I didn’t get any complaints from my loving family who ate them.
This Peanut Butter Sandwich Cookie recipe makes about 2 dozen sandwich cookies {about 4 dozen cookies}. Cookies should be stored in an airtight container and will keep for about 5+ days.

Peanut Butter Sandwich Cookies
Ingredients
For Peanut Butter Cookies
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ⅛ teaspoon salt
- ½ cup unsalted butter, softened
- ½ cup creamy peanut butter
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- ½ teaspoon vanilla extract
- 2 large eggs
For Peanut Butter Frosting Filling
- ¼ cup creamy peanut butter
- 1 and ½ cups powdered sugar
- ½ teaspoon vanilla extract
- 3 tablespoons milk
Instructions
For Peanut Butter Cookies
- Preheat oven to 375F degrees.
- In a large bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl using an electric mixer, cream together butter, peanut butter, and sugars. Add vanilla extract; stir until well combined.
- One at a time, beat in each egg until well combined.
- Slowly add flour mixture to wet ingredients; mix until well combined.
- Scoop dough into 1 inch balls, or use a #60 disher to scoop balls of dough. Place on ungreased cookie sheet, or silicone mat/parchment paper lined cookie sheet. Flatten the balls with a fork.
- Bake for 5-7 minutes. Do not over-bake. Cookies will set as they cool.
- Cool cookies on cookie sheet for 3 minutes; transfer to a wire rack to cool completely.
For Peanut Butter Frosting Filling
- In a large bowl using an electric mixer, cream together peanut butter, powdered sugar, vanilla extract, and milk until well combined.
- Spread the peanut butter filling on half of the cookies and top each one with another cookie. Eat & Enjoy!
