I know it's been a while since I last posted. The current state of the world has gotten me really down. I feel like I am losing my sanity and joy has been hard to come by these days.
I apologize for being a Karen, which is part of the reason I thought best not to post. I have been re-sharing delicious desserts on Instagram, as well as some of the many house projects we've been working on.
I was going to re-share these Funfetti Almonds on Instagram as part of my finding joy with sprinkles posts, but in the process decided this post needed a little facelift.
And so here we are...photos got a boost, gave you a little update on why I've been MIA with new recipes, and it's my pandemic birthday month so I am sharing desserts with sprinkles.
Plus if your life has been anything like mine, you could probably use a healthy dessert in your life. Funfetti Almonds are a healthy dessert, right? 😜

There is just something about funfetti also know as confetti. I think Lisa from The Bearfoot Baker said it best when she commented, “There is something about funfetti that is magical”. I agree and I think it’s the sprinkles!
Sprinkles add color. They add flare. They make you smile.
The Funfetti Almonds recipe came about when I didn’t want to waste leftover melted white chocolate. I hate waste, especially when baking ingredients don’t come cheap. Funfetti Almonds were the perfect solution.
It turns out that natural whole almonds dunked in white chocolate and sprinkled with colorful nonpareils are positively wonderful!
This is one treat my husband decided to keep for himself and not bring to work. My hubby brings most of the baked goodies I make to work to share with his coworkers.
Funfetti Almonds use very few ingredients, are a no-bake recipe, and are perfect for using up leftover melted white chocolate from making my Funfetti Truffles.
Plus we've already established they're kinda healthy because natural almonds are good for you, and sprinkles bring joy. I mean really, you could do worse. 😉
Funfetti Almonds, because everything is better dipped in chocolate and sprinkles.
Funfetti Almonds
Ingredients
- 1 cup natural whole almonds
- ½ cup white chocolate melting wafers or vanilla candiquik
- ½ tablespoon paramount crystals¹
- rainbow nonpareils
Instructions
- In a microwave-safe bowl, add chocolate wafers and paramount crystals. Microwave on medium heat for 30 seconds. Remove and stir slowly. Replace in microwave for 15-second increments until chocolate is completely melted.
- Mix almonds into melted chocolate; coating all almonds. Using a fork scoop almonds out and lightly tap to remove excess chocolate; transfer to parchment paper and immediately add sprinkles. Allow Funfetti Almonds to sit until chocolate hardens. Eat & Enjoy!
