Frozen Cake – purple, blue, and white ombre three layered birthday cake decked out with buttercream icicles, a rock candy ice castle, and Frozen's Elsa, Anna, and Olaf.

Last week it was unseasonably warm for March in WI. I positively loved it! I am over winter before winter even starts, so by March I am all for sunshine and retiring winter coats. It’s for that reason that I found it a tad-bit ironic that I spent the week thinking about snowflakes and ice castles. You see, last week was a Frozen week, as in “the cold doesn’t bother me anyway” Frozen.
If you saw this, than you know it was my niece’s third birthday. My beautiful niece, Ella, requested an Elsa/Anna cake with chocolate inside. She’s been talking about it since before her sister’s birthday party where I made Little Mermaid Cake and Cupcakes. Since the sun rises and sets with Ella {for me}, she was going to get what she wanted…and probably then some. Auntie Sarah doesn’t really do “simple”.
The Frozen Cake didn’t turn out quite as I had envisioned and at the same time better than I had hoped. I have visions of grandeur with everything I embark on, but as a perfectionist, grandeur is hard to come by. As a baker who bakes about two cakes a year, I’d like to improve on my cake decorating skills, so you can expect more cupcakes + cakes in Sarah’s Bake Studio future.
So, enough about me and my perfectionist tendencies, let’s talk Frozen Cake.
The Frozen Cake is three layers of 8” round cake stacked and filled with American Buttercream. I used Magic Line 8” Round Cake Pans, which are the BEST, and Wilton’s Bake Even Strips. The top and bottom layer of the cake was my favorite Triple Chocolate Fudge Cake, and the middle layer was Vanilla Cake.
The outside of the Frozen Cake was frosted with an ombre effect. It wasn’t quite as ombre as I would have liked, but as a first attempt I was pretty pleased. I used American Buttercream that I colored using Americolor Soft Gel Paste in regal purple, turquoise, and sky blue. I also used a bit of white frosting in the ombre and to frost the top of the cake.
The buttercream icicles were piped using decorating tip #12 Round, as were the snowballs piped around the bottom of the cake. I sprinkled both the top and bottom with Wilton White Sparkling Sugar and strategically placed Snowflake Sprinkles. I also frosted, sprinkled, and piped a number three on the cake, for the lovely 3-year-old birthday girl.
Of course a Frozen Cake wouldn’t be a Frozen Cake without Frozen figurines. With limited space and having only requested Elsa and Anna, I only put Elsa, Anna and Olaf on top of the cake, although Kristoff, Sven, and Hans were included in the set I purchased.
In addition, I used rock candy to give the cake dimension, as well as Elsa an ice castle-ish. I had originally intended on making the rock candy, but I ran out of time, rock candy needs time to grow. Instead I purchased the rock candy from Candy Buffet Store on Amazon. The supply I received was perfect, no broken pieces, and there was a good amount of rock candy on each stick. My hubby cut the balls off the ends of the sticks so I could jab them into the cake.
The Frozen Cake had to travel 20 minutes down WI winter roads, which means they were ridiculously uneven and bumpy. I was panicky the entire drive and in the end the cake settled a bit and puckered in a few areas. This annoyed me {perfectionism}, but either nobody cared, noticed, or were polite enough not to say.
I got a lot of compliments on how the cake looked, as well as tasted. I of course was way more critical.
In the end, Ella seemed to love her cake, which IS the most important part and the only part that mattered.
