Yesterday was the first day of spring, and what better way to ring in the new spring season than with Daisy Mini Cupcakes!
I ♥ mini cupcakes. I ♥ warm spring days, keyword being warm. If it’s not warm where you live than these cupcakes will warm your kitchen as you bake them and your heart as you eat them.
I made these cutie-patootie mini cupcakes for my niece's 3rd birthday. She had a Doc McStuffins birthday party, and we decided on colorful buttercream daisies for the cupcakes; all she wanted to do was lick the frosting off. I can't be mad about that because I wanted to too. You do too, don’t you? 😉

Daisy Mini Cupcakes Supplies
To make these lovely's you'll need a few baking and decorating supplies:
✿ To bake these mini cupcakes you'll need your favorite cupcake recipe. My favorite cupcake recipe is Very Banana Cupcakes and was used in making these flowery cupcakes.
If you don't have a tried and true mini cupcake baking pan, I highly recommend the Wilton Perfect Results Non-Stick Mini Cupcake Pan. I absolutely LOVE this pan and use it exclusively when baking mini cupcakes. It's large - 48 mini cupcakes, but that is part of its charm as I don't have to make so many batches.
✿ To frost these bad girls, you'll need your favorite buttercream frosting. My favorite buttercream is forever, Vanilla Buttercream.
✿ To color your buttercream, I recommend Americolor Gel Paste. For these gorgeous colors I used electric yellow, electric pink, electric blue, and electric purple. You'll only need 1-2 drops to achieve the electric color, but you can add more if necessary.
✿ For your cupcake decorating you'll need disposable pastry bags and a no.12 round decorating tip. If you really want to get fancy, use Wilton Icing Bag Ties; you do not need these by any means but they are useful if you intend on doing a lot of cupcake decorating.
Step-by-Step Directions for Daisy Mini Cupcakes
Step 1 | The Petals
You’ve got your delicious mini cupcakes baked and now you’re ready to petal your daisy.
Take your disposable pastry bag fitted with a no.12 round decorating tip and filled with buttercream, and place the tip on the outside of your cupcake, using an even pressure move the tip to the center of your cupcake, lightening up on the pressure as you reach the center. Continue this technique until the entire top of your mini cupcake is covered in petals.
Step 2 | The Central Disc
Using a disposable pastry bag and a no.12 round decorating tip, place a small blob of frosting in the center of your petals. You’ve now got your central disc aka the center of your flower.
